Italian Sausage with Rosemary, Gold Potatoes, Red Bell Pepper and White Onion
- 2 packages of Italian sausage, 5 links each - OPTIONS: sweet, mild, or spicy
- 1 small white onion
- 1 red bell pepper
- 1 bag of small gold potatoes
- 2 sprigs rosemary
- olive oil
- seasoning mix ( garlic, basil, oregano, onion, salt, pepper )
I was worried about overfilling the GoSun cooking trays, so I ended up using only 7 sausages ( 5 sweet and 2 spicy ) and half of the bag of potatoes. Can you guess what is for breakfast tomorrow?
I cut everything into approximately 1-inch pieces or chunks.
I spread a light layer of olive oil on the cooking trays ( sides and bottom ) and on the drip trays to assist with clean up later.
In the GoSun cooking trays, I placed the "drip trays" into the very bottom and layered the food on top.
- I placed the red bell pepper pieces in a single layer at the bottom.
- I added a single layer of gold potato chunks above
- I sprinkled some of the seasoning mix on the potatoes.
- I added a single layer of onion pieces over the potatoes.
- I added the slices of sausage in a layer evenly on top of the vegetables.
- I laid a sprig of rosemary over each batch - wanted to fill up both of the GoSun Grill cooking trays.
I also figured that as the sausage cooked, the drippings would trickle down through the other layers, adding more flavor to the vegetables below.
Cooking Time
We set out the GoSun Grill in the late afternoon, put the food in and crossed our fingers.
I set the timer for 30 minutes so that I would know to go check on the inside temperature.
Now...I am waiting...I will get back to you in 30...so, it is taking FOREVER to heat up...30 more...
So, seriously...ugh...after starting cooking at around 4:30, it is now 7:01...the sausage is finally cooked through...giving it twenty more minutes after swapping the order of the trays as loaded since research online has indicated that the innermost tray will cook hotter than the one nearest the handle/opening.

Lessons Learned
- Start pre-heating the GoSun Grill ( large one ) earlier in the day while sun is directly overhead.
- Go to the store while pre-heating since there is no fire danger in leaving it "on".
- Continue to pre-heat the GoSun Grill while prepping the ingredients.
- In prepping, cut items in narrower or thinner slices than you might otherwise.
- I should have sliced the potatoes instead of cutting chunks.
- Let the GoSun Grill pre-heat ALL the way to #3 on the gauge BEFORE adding any food...no matter how long it seems to be taking...BE PATIENT!
- Find a way to use the steam trays to float part of the meal above to let more heat get between the layers!
- The gauge on the outside changed very little for me ( most likely user error ) so it helped to check on the food at 30 minute intervals during this first experimental use.
- Get a digital thermometer with a wire lead that you can run into the cooking chamber so you can see the actual real-time inside temperature of the cooking chamber.
- Do NOT give up! Let it cook some more, then some more if needed...especially if you jumped the gun and added food before completely pre-heated because you were impatient.
- Do NOT let anyone talk you into giving in and finishing off the meal in the oven...just wait!
